The Easy Chef – Potato Skins Recipe


  • 4 large baking potatoes
  • 8 slices bacon
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 4 chives, chopped
  • 4 green onions
  • 3 tbsp. olive oil
  • 2 tbsp. butter
  • 1 tbsp. parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. pepper


  • Bake potatoes for 45 minutes, take out let cool.
  • Cut potatoes in half lengthwise; scoop out, leaving 1/4-inch shell.
  • Fry 8 slices of bacon, crisp, drain, crumble.
  • Put oil and butter in pan, gently fry garlic.
  • Turn off, mix in parmesan, salt, paprika and pepper.
  • Coat potatoes with oil, front and back.
  • Bake at 450° for about 10 minutes, turn over and bake again.
  • Remove from oven.
  • Fill potato with bacon and cheddar, (leave some bacon for last step) return to oven.
  • Bake another 4-5 minutes, remove.
  • Top with sour cream, sprinkle more cheese, some bacon bits and fresh chives and green onions.
  • Serve.
