BEING VEGAN – No Surprise – Someone is Now Eating Vegan In Portland

No, there is no surprise when I say that someone is Eating Vegan in Portland.  Not only is it one of the most vegan-friendly cities in America, but also in the world.  Portland has a professional basketball team by the name of The Trailblazers and it aptly describes how the the city has blazed a trail for plant-based eating and conscious-living for cities like ours here in Las Vegas to follow.  The city is full of restaurants and stores dedicated to cruelty-free eating and living.  It is a growing and active community that we can learn so much from. As I have chronicled here in Eating Vegan in Las Vegas, change is definitely happening as people are considering not only what they eat but how they live and how it is impacting their health, other living creatures, and the environment.  While there have been many wonderful people that have moved to the Portland area and are enjoying all that city has to offer, the area just got a little richer because of a special couple that has just moved there…Kim Miles and her husband Rick.

Kim and I actually go back all the way to high school in Northern California.  I know that we had a number of classes together but we kind of traveled in different circles.  I was moving from one sport to another and working in student government and Kim was busy saving the planet and spreading some love.  Kim spent most of her adult life as a very well-regarded artist and it was only in the past few years that we connected on a much deeper level than we had ever known in school.  We connected as vegans and have supported one another’s projects over these years as she has built her Positively Vegan brand and I have been building my Eating Vegan in Vegas presence.  Kim is not only a fabulous person, but she is also a very talented cook and writer.  She has such a wonderful and positive spirit that permeates all that she does.  She is extremely creative and communicates in a very real and whimsical way.  She loves food; she can take beautiful pictures of it and write about it in a way that you will want to experience for yourself.  It is been my hope that we could network together to help encourage others and build bridges to those that want to deepen their conscious-living experience or begin the journey for the first time.

That is why I am so pleased to announce that Kim has recently started a new blog, Eating Vegan in Portland.  It will be a sister blog, if you will.  We will work together to continue to reach our cities but also promote one another’s cities and vegan communities as well.  These are two cities with active and growing vegan communities but also are cities that benefit from many visitors, particularly Las Vegas.  Kim and Rick will be exploring all that Portland has to offer and will chronicle their adventures on the blog that everyone will enjoy.  It is our hope that these will be the first of many cities across the country and around the world that will begin similar projects and be a part of making more and more people make the connection as they see all that is available where they are living and visiting.  It may not have been as easy to do this five years ago, but it certainly is now and we want the world to know about it.

  1. Nice to see people working together like this! It’s amazing when you discover someone you knew has also become vegan. It probably happens more than we know about.
